Breakfast bowls are great for the weekday hustle to get everyone out the door on time. If you need something quick, nutritious, and easy to take with you, try making this version with our new A Little Hot Honey™ Microwave Ready Little Potatoes. This is meant to just give you some ideas for bowl toppings, but please use anything you have on-hand!
Equipment
- Skillet
- 1 package A Little Hot Honey™ Microwave Ready Little Potatoes
- 4 large eggs
- 2 avocados, diced
- 1/2 cup crumbled feta cheese
- 1 Tbsp fresh chives, chopped (optional)
Instructions

Step 1
Cook the Little Potatoes according to package directions. You can reserve some of the seasoning pack for the other ingredients f you like!

Fry or poach eggs to your desired doneness.

Divide potatoes between bowls. Top each with an egg, avocado slices, and feta cheese.

Garnish with fresh chives and serve for breakfast or lunch!
