Skewers are a great go-to dinner any time of the year. If it’s too cold to grill, you can heat up the oven and cook everything on a sheet pan. This recipe has some veggie suggestions, but you can easily swap in your favorite veggies or any that you need to use up in the fridge! Make it a full meal by adding your favorite protein like chicken, shrimp, or tofu. This dish is made with our new A Little Garlic & Parmesan Oven or Grill Ready Little Potatoes!
Equipment
- Wooden or metal skewers
- 1 package A Little Garlic & Parmesan™ Oven or Grill Ready Little Potatoes
- 1 red bell pepper, diced
- 1 zucchini, sliced into thick rounds
- 1 red onion, diced
- 1 cup cherry tomatoes
Instructions

Step 1
Preheat the grill to medium-high heat or oven to 425 °F.

Cook the Little Potatoes according to package directions.

While potatoes are cooking, prep the veggies.

Thread potatoes, bell peppers, zucchini, onion, and cherry tomatoes onto skewers.

Place skewers on the grill or in the oven, turning occasionally, until veggies are slightly charred.

Serve warm.
