Skewers are a great go-to dinner any time of the year. If it’s too cold to grill, you can heat up the oven and cook everything on a sheet pan. This recipe has some veggie suggestions, but you can easily swap in your favorite veggies or any that you need to use up in the fridge!   • 1 package A Little Garlic & Parmesan™ Oven or Grill Ready Little Potatoes
  • 1 red bell pepper, diced
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, diced
  • 1 cup cherry tomatoes

Instructions

  • Step 1

    Preheat the grill to medium-high heat or oven to 425 °F.

  • Step 2

    Cook the Little Potatoes according to package directions.

  • Step 3

    While potatoes are cooking, prep the veggies.

  • Step 4

    Thread potatoes, bell peppers, zucchini, onion, and cherry tomatoes onto skewers.

  • Step 5

    Place skewers on the grill or in the oven, turning occasionally, until veggies are slightly charred.

  • Step 6

    Serve warm.
