Equipment
- Immersion blender
- Large bowl
- Baking sheet
- 3 cups Little Potatoes, halved
- 2 chicken breasts, quartered
- 1 package (10 to 12) mini sweet peppers
- 1/2 red onion, minced
- 1 cup plain yogurt
- (To taste) salt and ground pepper
Mild Jerk Seasoning:
- 2 green onions, chopped
- 2 cloves garlic
- 2 Tbsp grapefruit juice
- 1/4 cup vegetable oil
- 1 Tbsp brown sugar
- 4 sprigs fresh thyme
- 1 Tbsp sweet paprika
- 2 tsp allspice
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions

Step 1
Preheat oven to 400 °F.

With an immersion blender all of the ingredients for the jerk seasoning.

In a large bowl, mix the seasoning with the potatoes, the chicken, the peppers and onions.

Place on a baking sheet and bake 25 minutes.

Remove from oven, blend a cooked sweet pepper with the yogurt.

Step 6
Season with salt and pepper. Serve the dish with the yogurt sauce.
