Chicken and Potatoes
- 8 skinless, boneless chicken upper thighs
- 1.5 lbs little potatoes, halved
- (To taste) salt and pepper
Mango Topping
- 1 mango, diced
- 1 cup fresh corn
- 1/2 cup fresh cilantro
- 1 cup cherry tomatoes, halved
- 1/2 lime
- 1 Tbsp olive oil

Place all ingredients for the jerk sauce into a food processor or blender. Mix until the sauce becomes smooth, then set aside.
